Bubbe Frieda's Matzo Ball Soup

"Frieda's rule: club soda in the matzo ball mix, and never open the pot while they cook, no matter how curious you are."
Ingredients
- 1 cup matzo meal
- 4 eggs, beaten
- 1/4 cup schmaltz or oil
- 1/4 cup club soda
- Salt and pepper
- 2 quarts chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- Fresh dill
Instructions
- Mix matzo meal, eggs, schmaltz, club soda, salt, and pepper. Chill the mixture for at least 30 minutes.
- Bring a large pot of salted water to a boil.
- Wet your hands and roll the mixture into balls about the size of a golf ball.
- Drop the balls into the boiling water, cover, and simmer for 30-40 minutes without peeking.
- Meanwhile, simmer the broth with carrots and celery until the vegetables are tender.
- Transfer the cooked matzo balls into the broth, top with fresh dill, and serve hot.
