Grandma Ruth's Gefilte Fish

Ingredients
- 2 lb ground whitefish and pike, mixed
- 2 eggs
- 1 small onion, grated
- 2 tbsp matzo meal
- 1 carrot, grated, plus extra sliced for the broth
- 1 tsp sugar
- Salt and white pepper, generously
- Fish bones and heads, for the broth
Instructions
- Simmer the bones and heads in water with sliced carrot, salt, and a bay leaf for 30 minutes to make the broth.
- Mix the ground fish with eggs, grated onion, matzo meal, sugar, salt, and pepper until smooth.
- Wet your hands and shape the mixture into ovals.
- Lower the ovals into the simmering broth and poach, covered, for about an hour.
- Cool the patties in the broth, then chill before serving with the carrot slices on top.
